I love when you can get really good squash. I think you know it’s fall when you can get the best ones. I enjoy most of them but this Spaghetti Squash recipe has become one of my family’s favorite. We’ve reduced the calories from our typical recipe by lowering the butter and using pure maple sugar instead of brown sugar. Give it a try and let me know what you think.

Ingredients

  • 1 Large Spaghetti Squash
  • 1 TBSP Olive Oil
  • Salt & Pepper
  • 1 TBSP butter
  • 1 TBSP Pure Maple Syrup

Method

Step 1

Pre-heat oven to 350 degrees. Cut squash in quarters. Clean it out. Brush each quarter of squash with olive oil. Salt and pepper. Bake for 45 minutes or until squash is tender. Remove from oven. Take fork and pull squash off the peel like in the video. Heat butter in sauce pan. When it starts to turn a little brown, add squash to pan. Saute for a few minutes just to coat the butter on the squash. Add salt and pepper if needed. Drizzle the syrup on the squash. Stir & serve.
